Resveratrol and its derivatives are mainly found in at least 72 species of plants belonging to 31 genera and 21 families including grape, Polygonum, peanut and veratrol, including common medicinal plants such as Polygonum cuspidatum, cassia and mulberry, as well as crops such as grape and peanut. The main plants that naturally source resveratrol are Polygonum cuspidatum and grape Vitis. Polygonum cuspidatum is a perennial shrubby herb that grows mainly in Hubei and Sichuan provinces of China. The roots and rhizomes of Polygonum cuspidatum are the main parts for extracting natural resveratrol, which is mainly found in polydatin form in polygonum cuspidatum plants. The resveratrol content in fresh roots of Polygonum cuspidatum was higher than that in fresh stems, and there was almost no resveratrol in fresh leaves.
Natural resveratrol has two kinds of structures: cis and trans. In nature, it mainly exists in trans conformation. The two kinds of structures can combine with glucose respectively to form cis and trans resveratrol glycosides. The cis-trans resveratrol glycosides release resveratrol in response to glycosidase in the gut. Trans resveratrol can be converted into cis-isomers under ultraviolet light.
